Installing original piston (but new rings) without honing the cylinder?

You're probably ok unless there is a fair amount of wear in the cylinders. With worn cylinders, a ridge is left around the top of the bore. This ridge can cause the top ring to break as it hits it. Also honing the bore removes the surface shine leaving microscopic scratches which can hold oil during break-in and provide lubrication.
